Olive Oil

For many years, olive oil in Crete was not a choice, it was a necessity.
Olive groves passed from grandfather to father and from father to son, together with the knowledge of how to care for them.
The variety is Koroneiki.
It was cultivated long ago because it could endure the land, the altitude, and difficult years.
It was the olive that gave a steady yield and kept the household standing.
For the people of the village, olive oil was not a product.
It was food, light, and the foundation of everyday life.
Today, the same groves continue to be cultivated.
Not to change their character, but to preserve it.
The story does not stop it simply continues.
